Harry Potter Old Fashion Chocolate Cake

Unofficial Harry Potter Cookbook

Ingredients:
2 oz. chopped bittersweet chocolate
1 tbsp. instant coffee
1 1/4 c. boiling water
2 3/4 c. all-purpose flour
2 3/4 c. granulated sugar
3/4 c. unsweetened cocoa powder
1/2 tsp. salt
2 tsp. baking soda
1 tsp. baking powder
1 c. vegetable oil
1 1/4 c. buttermilk
4 large eggs
2 tsp. pure vanilla extract

Directions:
Preheat oven to 350ºF. Grease and flour 9″ x 13″ pan. Place the chocolate and coffee in a small bowl, pour boiling water over them and let sit 5 minutes, then whisk until smooth. Using a mixer combine flour, sugar, cocoa powder, salt, baking soda, and baking powder in large bowl, mix until combined. Add the oil and buttermilk and mix well, scraping sides if needed. Add eggs one at a time, mixing after each one. Add the chocolate-coffee mixture carefully, on low speed (it will slosh). Add the vanilla, finish by scraping the bowl and mixing batter with rubber spatula. Scrape batter into the pan and bake for about 45 minutes, until the cake feels firm when touched or until toothpick comes out clean (with a few moist crumbs). Cool cake completely in the pan on a wire rack, dust with confectioner’s sugar and serve right out of the pan.
