I tried making this pie, baking at 475 for 2 hours… at around the 45 minute mark my pie shell turned to charcoal. Should have checked the comments before cooking

does anyone know if she's not blind baking because it's a shorter video or if there's any sort of reason not to, considering this apple filling?
I made this pie for my family tonight and it was amazing, everyone loved it. It was slightly tart, slightly sweet, and the crust was incredibly flaky and flavorful. The only changes I made was peeling, coring, and slicing the apples the night before, mixed with spices, sugars, and salt. Leaving it in the fridge overnight drawing out a lot of its juices in place of Unfiltered Apple Cider, which I didn't have. When I was ready to start baking I did a blind bake on (only) the bottom pie crust using Claire's egg white technique for the pecan pumpkin pie, same temps. Meanwhile, I reduced all the apple liquid, adding 1-2 TB of cornstarch to thicken. Sidenote: You REALLY need a deep dish crust for this because no way are that many apples going to fit in 1 regular sized pie plate. Alternately, you can make 2! *I also made whipped cream by whisking 1 cup of VERY cold heavy cream with 3 TB powdered sugar and a splash of vanilla until stiff peaks.

If i may make a suggestion for editing…the video adds the caption to bake at 475 for 1.5-2 hours, while the printed recipe says to bake at 375. This may cause someone to burn their crust before the filling is finished 🙂

Compared to your later videos this video sucks. I'm using this to compare to Rick's latest pie video with this recipe. Your list of ingredients is missing cold water, you list cardamom instead of cloves (or is it cloves instead of cardamom?), on screen it says 475 and in the text recipe it says 375. Super dissapointing, can't wait to try it!

Not really sure why you need all the sugar and so much spice… is this an American thing? Because at home (i'm a Brit i'm sorry to say) my family always makes pie by just cooking the apples and using the natural sweetness, tastes so much fresher and more delicious in my opinion.
