This might be my favorite dish you’ve made thus far. I love me some pub fare. Shepherd’s Pie, Cornish Pastie’s etc. This looks bomb! Great production on the video, as well.
Why not use your Instapot. I have been using a pressure cooker more and more and the meat is crazy tender in a third to half the time, or even just better overall.

Cast iron pan makes the best pie, even apple pie. Never do the egg wash, 1/2 butter 1/2 lard in the crust does the brown thing for me. Pie looks great! Thank you for the recipe, Jaxx

we do something similar, minus the mushrooms, in a pie pan inside a dutch oven at camp. We've used whiskey, hard cider, and even water and it's always good
