3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 – 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
– In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
– Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
– Next add and combine all dry seasonings and spices to cooked ground beef
– Now add tomato paste, combine and cook for a minute or two
– Next add beef broth, stir and mix well
– Add chopped chipotle pepper, adobo sauce and bring to a boil
– Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
– After and hour add cornstarch slurry to thicken chili
– Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Interesting recipe but a bit too soupy for me.. In a large crock pot put 2 large cans of chopped tomatoes and 1x 8 ounce can of tomato sauce.. To that add 3 tablespoons of Cumin and chili powder, 1 tablespoon of cilantro , 1 tablespoon of chopped garlic and 1/2 teaspoon of ground or crushed red pepper.. Coarse chop 2 cups of onions and 1 cup of celery but be sure not to use dark green stalks and add that to the crock pot.. In a large pot or skillet fry 5 pounds of beef which can be 80/20 ground meat or half ground and half chopped chuck steak.. Make sure to cook out all the water and get some crispy meat, scrape that into the crock pot while saving the beef fat in the pan.. Add 1 cup chopped onions to the fat in the pan and cook them till they are caramelized then scrape them into the crock pot and deglaze the pan with 1 cup of water and pour that into the crock pot.. Cover and cook the contents of the crock pot on high for 5 hours or more stirring once an hour or on medium for 8 to 12 hours stirring every 2 to 3 hours.. At this point you can eat it con carnie or you can add frijoles and maze (beans and corn) of your choosing then cook on medium or low for another hour or two.. Completely substituting several cans of whole corn instead of beans for corn chili is a twist and some people like to fry the corn in a few tablespoons of olive oil till some browning occurs.. Another twist is to substitute sage for the cumin and have sagebrush chili.. As always adjust spices to you liking and if you want adding liquid smoke if you don't do the carnalized onion and seared beef is a workable substitute..

Ummm grew up on frito pies especially as a kid my mom would cut small bags of fritos long ways added chili and cheese and a spoon boom dinner was served!!!
