We’re well and truly into September and that means it’s apple season so we decided to share a healthier apple pie recipe with you all. We created a dairy free pastry alternative and a beautiful glaze to bake your apples in. If you have any amazing family recipes share them around and we can all have a deliciously creative autumn.
apple sauce –
1 large cooking apple grated
1 tbsp honey
pinch cinnamon
for the crust
140g almond meal
200g oats (use gluten free if celiac)
100g melted coconut oil
4 tbsp apple sauce
apple filling
800g apples
6 tbsp orange juice
maple coconut glaze
4 tbsp maple syrup
cinnamon
6 tbsp orange
4 tbsp coconut oil
2 tbsp almond butter
First step preheat the oven to 180 degrees
next make your apple sauce by grating the apple into a medium pan, add the honey/ agave and the cinnamon and cook on a medium heat for 4-5 mins stirring regularly to ensure nothing burns. Cook until the apple has broken down and is like an apple sauce. Take off the heat and add to a large mixing bowl
In a blender or food processor blend the oats until they reach a flour like consistency. Melt the coconut oil. Add the oat flour, almond flour and coconut oil into the large bowl with the apple sauce and mix well until it forms a nice dough.
Get your pie dish and spread the dough really evenly ensuring to put it up the side. Work hard to ensure you have an even spread so that it cooks evenly, it should be approx 1/2- 1cm thick all over
Put this in the preheated oven and bake for 15 mins at 180 degrees.
while the base is baking time to prepare your apples. Slice the apples into thin slices. In a large sauce pan add 3 tbsp of orange juice and 1/2 of the apples and cook for 3-4 mins on a high heat until the apples start to soften. Stirring gently so that they all cook evenly but not too rough as you want them to hold their form. Repeat for the other half of apples.
last step is to make the glaze; in a saucepan on high heat add all the ingredients and stir regularly until it comes to the boil, reduce the heat and leave it simmer for 1 min.
One your pie crust is cooked remove from the oven and layer in the apples, you can make a really pretty design by starting at the outside and simply layering one slice ontop of the next and follow a circular design to the centre, repeat until you have used all apples.
Lastly pour on the glaze onto and bake in the oven for 15 mins at 180 degrees

I had a lot of debate with people who say beekeeping is the same animal abuse as meat eating, even if I explain that I don't steal all the honey only the exess… my bees overwinter on their own honey, I only feed them with sugar syrup when nessesary…

Made this for my granddad's birthday, and everyone was delighted. I tried to make it from locally (ish) produced ingredients (central Europe), thus the following altercations:
Homemade Golden Syrup instead of maple syrup,
Hazelnuts instead of almonds,
Sunflower instead of Coconut,
and lemons instead of oranges (purely because of taste preference).
I also skipped the simmering the apples in the juice because of time pressure, and they came out just right, with a little bite to them, but still soft enough to go on a pie.
And just for the sake of adding an extra bit of creaminess my culture requires in birthday cakes, I added some lemon custard (lemon juice and zest, oatmilk, golden syrup and corn starch) on the base and arranged the apples in top of it.

This is by far the best ive seen. Will def make a similar one. I use date sugar and syrup and fresh dates in place of certain things so id change 1 or 2 things. But fuuuuuck me sideways this looks amazing

I'm happy to see vegan recipes with honey in them. I truly do not understand what a vegan's objection to honey would be. Nothing was caged, killed, or abused. Local honey is beneficial for those with allergies. If people want to say I'm not vegan because I eat it, so let them! You guys make great recipes here, keep up the great work!
