I tried this with homemade butter milk. I don't think its working… my cream smells spoiled not sour… and I put it in the fridge, it hasn't thicken at all.

hmm other recipe i saw was heavy cream, whole milk, and white vinegar. same process tho.
a top 10 "skill" for any chef. so easy. I put some old wasabi in a little dollup and used it on a salmon bagel… and it was it new world of bagel. I did his stroganoff recipe with some of the rest… and it was a 10 (if you like mushrooms, why aren't you making more stroge?)

Mines thickened up, but not as much as yours in the room temp faze , can I let it sit out longer than 24hours. Ps ihad to get whole milk and scim off the cream , hope that's ok
I couldn't find any pasteurized heavy cream so I had to use ultra pasteurized heavy cream with my only choice being low fat cultured buttermilk. Not enough used to make that much of a flavor difference. It was cultured, so it worked. Came out perfectly.
I mixed with full fat sour cream, it worked!

Creme fraîche is closer to heavy cream than sour cream. Here where I live we call whipping cream : crème fraîche
