Do you love cool, creamy, velvety custard pies? Everyone does! But making them takes some “insider knowledge” you may be overlooking. This short video will teach you all the tricks and make your cream pies the envy of all.
#1 – partially prebake your pie shell. I know you don’t want to do that -fiddle around with the dried beans and the foil and take the extra time – so I’m sorry. But custard pies are really wet and prebaking your shell is the only way the crust will stay even remotely crisp. Custard pie filling is delicious, but considerably less so when there’s a damp crust lurking beneath.
#2 – don’t skimp on the rich stuff. I know a lot of custard pies call for only whole milk or even skim milk, but seriously, how many custard pies do you eat in a year? Not enough to count calories, right? So use half milk and half heavy cream in your custard pies. They’ll taste incredible. Eat extra kale and quinoa to make up for the heavy cream.
#3 – bake your custard pie on a baking sheet. Put your pie shell on top of the sheet, right next to the oven, and then add the filling so you don’t have far to go. It’s amusing to watch someone traipse clear across the kitchen with custard sloshing around like they’re carrying an overfilled tub; you just don’t want to be the one they’re amused at.
#4 – be patient. Custard pie like to be coddled and gently baked at 350 degrees, no higher or it will lose that velvety texture. Bake you pie on the middle shelf. This could take up to 50 or 55 minutes. Go read a book. Don’t hover like a helicopter baker.
#5 – your pie is done when the filling wobbles. You don’t want to see waves. Give the pie a little nudge to check. It shouldn’t be soupy in the center. You can stick a paring knife in the middle and see if the knife comes out clean, but don’t go all slasher on it and hack up your pretty pie.
The moment it’s done, get your pie out of the oven and onto a cooling rack. Cool thoroughly, chill a few hours, and you’re ready to eat. Now go bake one.
