I'd like to adjust your recipe, 375° at 25 mins is sufficient but you have to let your pies cool down with the oven for about 5 mins on middle rack and then transfer on a platter to cool down for at least an HOUR before digging in. Reason being the puff pastry is delicate and needs to be cool or at room temperature – to settle or else its too flakey. Cheers.
