This is my favorite peach pie. I think it’s the best peach pie. It’s an old fashion pie recipe. The custard seems to disappear into the peaches and you are left with a peach-and-cream flavor sensation that’s absolutely delicious.
Old Fashioned Peach Pie Recipe:
1 9-inch unbaked pie shell
2 cups of sliced yellow peaches (about 2 large peaches), peeled and pitted
1 1/2 cups light brown sugar
1/3 cup white sugar
2 tablespoon instant tapioca
2 large eggs
3/4 cup half and half
1 tablespoon butter, melted and cooled
1 teaspoon almond extract
1/2 teaspoon salt
In a bowl, mix the sliced peaches with 1/4 cup of brown sugar. Let sit at room temperature for 30 minutes. This will remove some of the water from the peaches.
Using a coffee grinder (or pestle and mortar or blender), place the tapioca in the grinder and process until the granules break down and it is mostly powder. Set aside.
In the meantime, whisk together the 2 egg yolks and the half and half. Add the melted butter, almond extract, salt, and 3/4 cup brown sugar. Whisk vigorously until all the sugar dissolved. This will take a couple of minutes.
Preheat the oven to 400F. While the oven is heating up, place a cookie sheet on the rack that will hold the pie. This will help cook the bottom on the pie crust and help prevent it from getting soggy.
Drain the peaches. Place the drained peaches back in the bowl. Add the processed tapioca and 1/2 cup brown sugar. Mix until the slices are well coated. Place the peaches in the pie shell. Pour the egg mixture on top. Don’t worry that some of the peach slices will float, they are supposed to. Place the pie on the hot cookie sheet and bake for 40 minutes.
After the pie has been baking for 30 minutes, that is there are 10 minutes left, start making the meringue. In a mixing bowl of an electric mixer, place the 2 egg whites. Beat on high until the egg whites are foamy, add 1 heaping tablespoon of white sugar. Continue beating on high for 1 1/2 minutes. Repeat this step of sugar and beat until all the sugar in beaten into the meringue.
When the pie is done, remove from oven, drop the meringue on top by spoonfuls. Smooth and seal the rim of the pie. Place the pie back in the oven and bake for another 12-25 minutes, keep an eye on the pie so the meringue doesn’t burn.
Remove from the oven. Let cool.

1 1/4 cup beef broth
1 1/2 cup chopped carrots and peas
2 cups ground beef
