NEWS FLASH! Me and Sally just created MY FAVOURITE EVER CUPCAKE! This is no joke, these Sticky Toffee Pudding Cupcakes with Custard Icing are honestly the most delicious cupcakes and you just HAVE to bake them! The sponge is so moist and full of dates, ginger and spices, and that Creme Mousseline German Buttercream is the perfect pairing!

For the Sticky Toffee Sponge

150g Pitted Dates
2 Stem Ginger Balls
175ml Boiling Water
1 tsp Bicarbonate of Soda
75g Soft Unsalted Butter
150g Soft Light Brown Sugar
2 Large Eggs
175g Self Raising Flour
1/2 tsp Ground Ginger
1/2 tsp Ground Cinnamon
1/8 Ground Nutmeg
1/4 tsp Salt

For the Sticky Toffee Sauce

80g Unsalted Butter
80g Dark Musavado Sugar
100ml Double Cream
1/2 tsp Yeast Extract (e.g. Marmite!)
Pinch of Salt

For the Custard Icing (Creme Mousseline)

450ml Whole Milk
2 tsp Vanilla Extract
135g Caster Sugar
30g Cornflour or Cornstarch
2 Large Eggs
2 Egg Yolks
250g Unsalted Butter
1/4 tsp Salt
Caramelised White Chocolate Swiss Meringue Buttercream:

    Ooh, I love custard! I also love Marmite, but think I'd leave it out of the toffee sauce πŸ˜€
    Btw, I don't cut a hole in cupcakes when filling with sauce or lemon cheesecake icing – I just insert the nozzle straight into the top of the cake. It kind of swells up a little, but it retains its integrity and gives a lovely surprise when you bite into it πŸ™‚

    I need help!! I’ve made this buttercream a few times and they won’t blend together 😭 I’m leaving the custard to cool for hours and use very soft room temperature butter and it won’t combine at all! Looks like the butter is melted 😬😬

    I have done everything right, but my custard topping looks like cottage cheese. The process of adding the soft butter,(that was cut into small cubes) but very soft is not mixing. HELP, how do I fix this?

    Hi Jemma , may I know why some recipe will started with beaten the butter and sugar until fluffy and some recipe you just mix the butter into the dry ingredient (direct way ) ?

    The 49 people that did not like this video never made these cupcakes I ordered the maramite and muscovado sugar. These cupcakes are so incredibly delicious.
