Milk Bar Inspired CEREAL MILK CUPCAKES | Cupcake Jemma



We LOVE the cereal milk soft serve by milk bar SOOOO much that it inspired us to come up with this awesome cupcake recipe. The cornflake milk taste takes you right back to those days as a kid when the best bit about breakfast was slurping up the salty sweet milk after you finished your cereal. Enjoy! Recipe –
For the biscuit base:
50g cornflakes
50g biscuits – graham crakcers or digestives
50g butter melted

For the cornflake sponge:
125g soft unsalted butter
125g caster sugar
125g self raising flour
1/4 tsp bicarbonate of soda
2 lg eggs
1.5 tbs cornflake milk
good pinch of salt

For the Cornflake buttercream
150g soft unsalted butter
330g icing sugar
4 tbsp cornflake milk

To finish: sprinkles and cornflakes!

    I'm so glad someone has pointed out that a big mixer probably won't get all the mix properly. I see so many people neglect to do it and you can tell it isn't mixed, but they continue on. Guess that's the difference between beginners and a great channel like this.

    I’m working on making the cereal milk portion but after about 10 minutes on the stove top the milk starts to get super thick and it hardly yields any actual milk it’s just a lumpy mess. I don’t know what I’m doing wrong, any trouble shooting suggestions?

    How do you get the milk to bubble away for 30mins without drying out?! It took me 3 goes to get usable cornflaky good (rather thick) milk… and that was after I only let it bubble for 5 minutes!
    Totally worth it – end result was 🤤🤤🤤

    Hey! I LOVE your tutorials and have made them for YEARS!! But nearly every time I forget to swipe through to the oven temp to get it heating up. Any chance you could bob it with the ingredients in future? Can’t wait to try these! Had the milk bar ice cream for the first time ever this year and I’ve not stopped dreaming about it since.. that saltiness!!!

    I tried this today. My only complaint is re the cornflake milk. after only 10 mins, the milk had all but dried up so I had to add more. I stopped infusing it after 15 mins and when I strained the cornflakes what I was left with was not milk but what looked like cornflake mush. Nothing like what was in your video. I then went to see if I could find the Milk Bar recipe for cereal milk. I found it on their website and they don’t boil the cornflakes in the milk. They just let it steep in the milk for 20 mins after baking them. And they make it clear that you do not want to push the cornflakes through the sieve (which is what I did because I was trying to extract as much liquid from the mushy cornflakes as possible). I will have to try this again using the Milk Bar method.

    Made these but they were a bit too sweet for my liking, maybe I didn’t add enough salt? In the end I used only a fraction of the buttercream. Also, I didn’t taste the cornflakes(milk). It tasted fine but not that special unfortunately
