Have you ever wondered what would happen if you made a HUGE cookie and baked it on top of a baked cheesecake? Well wonder no more! I can tell you with absolute confidence that it tastes amazing, is really fun to make and it looks pretty great too. So what are you waiting for?
Recipe –
For the Buttery Biscuit Base…
300g biscuit crumbs (I used Hob Nobs)
90g melted butter
1tbsp Golden Syrup (corn syrup will work)
For the Cookie Bit…
100g soft unsalted butter
150g light soft brown sugar
75g caster sugar
1 lg egg + 1 egg yolk
1/2 tsp vanilla extract
190g plain flour
pinch of salt
190g chocolate chips
For the cheesecake bit…
575g cream cheese such as Philadelphia
115g caster sugar
2 lg eggs
1/4 tsp vanilla extract
Melted chocolate and smarties to finish

Good morning Jemma. I followed your recipe to the "T" but had some problems. Firstly, it took almost an hour to bake and when it was finished, the top looked like the waves of the sea !!! It tasted great but I do not know what I did wrong – HELP please !

I made this yesterday for a birthday party on Sunday and have just realised that I put the cookie dough on before the cheesecake….opps a daisy !!
