This is the chocolatiest cupcake I have ever made, packed full of the good stuff from beginning to middle to end! Top to bottom. INSIDE OUT!!! Eat it and weep (in a good way!)
Recipe –
For the chocolate truffle filling/topping…
300g dark 54% chocolate
120g double cream
30g unsalted butter
For the sponge…
115g dark chocolate
115g unsalted butter
80ml cold coffee/water
2 lg eggs
20ml vegetable or other flavourless oil
65g buttermilk
135g self raising flour
30g cocoa powder
190g caster sugar
1/4 tsp bicarbonate of soda
For the Chocolate Cream Cheese icing –
For the top, drizzle some melted choc or chocolate ganache and pop a truffle on!

Can you please tell me if I can use refine flour instead of self rising flour?
We don't have self raising flower in my country what can I use instead?

@cupcakejemma i made this recipe yesterday but i left the chocolate truffle mixture in the fridge too long and now itβs set π Is there a way of bringing it back to the consistency iβll need to make the truffles? Or is all hope lost π© x

Made them yesterday, and here are some of the tips that I'd like to share with you!
If you don't really like cheese, don't make the cream cheese frosting. Everyone thought it was delicious and was the perfect contrast to the rich chocolate flavour. However, I didn't really like it. The next time I'll be making them, I'll switch it to another one.
Second tip, I really liked the runny chocolate inside, however, I wished there was just a little bit more! So if you're like me and love lava muffins just make a little more ganache and larger holes in the muffins so that you can fit it inside. If you don't feel like making more, then you could just keep 3/2 of the mixture for the filling. You'll still have enough to make your truffles, but they're going to be a bit smaller.

is there anything we can use instead of buttermilk?
Heyy i tried the cupcake on its own and it was so delicious with some home made buttercreamπ . It turned out crispy on the top and super fluffy for the rest. But i used normal butter instead of unsalted and whole milk instead of butter milk just cause i didnβt have any but the results were satisfying. Never be afraid to change the recipe a little for those who donβt have the full thing π
