Hey hey hey! It’s time for another Bakealong. You guys have been really baking your little socks off on these Sundays and I just love seeing all of your bakes on Instagram. This week’s recipe is for a Bundt Cake but it’s not just a boring old vanilla or chocolate one. This one is a tasty, spiced ginger one. I can’t wait to see how yours turn out!

Recipe…
SPONGE

250g unsalted butter
220g light brown sugar
1 large egg
345g golden syrup (or dark corn syrup, or honey)

250ml buttermilk (

470g plain flour
1/2 tsp salt
1 tsp baking powder
1 tsp bicarbonate of soda
2 tsp cinnamon
2 tbsp ground ginger
45g grated fresh ginger

CARAMEL DRIZZLE

220 g caster sugar
120ml water
245g double cream
1 tsp vanilla

    If I’m in a hurry and need to get my butter to room temperature quickly, I pop it in the microwave on half power for 10-20 seconds.

    Hey Jemma! My favorite cake to make in a bundt tin is your Rosemary, Honey & Yoghurt loaf. This is one my go-to cakes as I normally have all ingredients on hand and it uses olive oil which means I don’t need to have softened butter.

    This looks SO good! I wonder if you could add toasted pecans to the batter for some texture (only one way to find out!)? Maybe also add some of that yummy caramel to the batter so that there are ribbons of caramel on the inside? Or a white chocolate ganache for the top sprinkled lightly with cinnamon? I guess the point is that this cake looks pretty versatile and we are only limited by our creativity! Thanks Jemma!

    Hi Jemma!
    My favourite bundt cake 🍰 is a chocolate 🍫/vanilla marble cake.
    I am (and have been since I was about six years old) the Birthday/special occasion cake baker in my family, so when my birthday comes around (or my wedding for that matter, lol) I am forced to either have a bought cake or make my own. This year, I have chosen to bake my own, but I REALLY wanted to have an unusual flavour – something autumnal and fantastic! Your ginger bundt cake looks and sounds amazing! I think I will tweak it just a little and add some crystallized ginger to the batter to crank up the gingeriness….. and maybe some salted caramel chips? I also think I will frost mine with a cream cheese icing, flavoured like Chai ☕️. I think it will be a lovely combination. I will try to remember to post it to Instagram and tag you.
