Here is yet another C&D flavour for your delectation! We’ve been baking these Caramel Popcorn cupcakes for almost 10 years and they are still one of the most popular flavours. And with Oscars night almost upon us, it seemed appropriate to bake them!


Recipe –
For the sponge…
125g self raising flour
2 lg eggs
60g dark brown sugar
65g caster sugar
100g burnt butter
25g soft unsalted butter
1/4 tsp bicarbonate of soda
1 tbsp milk

For the Caramel Buttercream…
200g butter
320g icing sugar
200g salted caramel ( )
2 tsp salt

For the popcorn…
1 tbsp vegetable oil
10g butter
70g popcorn kernels

    Hi jemma, how you do the caramel on top of d popcorn? Is d recipe same with your caramel.. Cos d consistency is different … Not too thick

    Definitely stove top popcorn. I can never keep from over cooking microwave popcorn, but almost never burn it on the stove top. Just drop a few kernels in the pan as the oil heats and its ready as the kernels pop. Be careful to wait until the test kernels pop or you are sure it's not going to pop.

    Red and white cups are so cute and the caramel frosting is to die for! I really like her frosting technique, it always comes out so light and fluffy.

    I love brown butter. I make it to have on hand all the time, and love making ermine buttercream out of it.
    TIP: To make sure I make it the same every time, I put it over medium-low with a candy thermometer, and when the temp reads 135ยฐF (57ยฐC) , it's ready. ๐Ÿ™‚

    Made these last week they were delicious! I added some licor 43 to the caramel and some vanilla extract to the cupcake batter for that extra depth. All 12 were gone within an hour after baking them.
