I have taught you lots of things now, I hope. But sometimes, you need to trust your knowledge and start inventing bakes yourself. This recipe is what happens when you take a few things you love making and put them together in a new way to create a whole new thing! A Salted Caramel and Chocolate Pie! (But of course, feel free to make my pie before you go off and invent your own thing!)
Recipe –
Chocolate shortcrtust pastry –
Chocolate ganache –
160g dark chocolate + 160g double cream
Caramel Filling –
200g sugar
100ml water
100g double cream
1/2 tsp vanilla extract
generous pinch of salt
10g butter
Italian Meringue –

Can you use the whipped ganache on any thing else?
A chocolate party pie? Sounds like a lot of fun ππ
Surely as a baker you would know to use your arm like a rolling pin to flip your pastry on it to transfer to the tart pan or you can fold it in half then into half again. Pick it up find the middle of the pan, place the pastry center there and unfold it. π Looks soooo good, Jemma! There is one thing more I must say, adding the stars and gold Dragees made the tart look so elegant and celestial! π
Just made this recipe and it turned out great! I would just make more ganache to this amount of caramel, but it's my personal taste… Everything else worked out just fine and it was a success

Where do you buy the cupcake cases that go transparent after baking? It was a standard, but half a year ago things changed and everybody sells white greaseproof things that stay white π£ I have hundreds now as try different brands and shops but really need the clear ones. Cheers xx

Oh dear I did something very wrong. My caramel turned into something hard and wouldn't mix in the cream. I didn't leave it at room temp so that is probably the problem.
Itβs nice to use cocoa instead of white flour when you roll it out.
Hai jemma..i have 1 question. I dont have any torch, so is there any other method to burn the meringue?
How long will the pastry last in the fridge? I did the first part, and intended to finish the pie the next day, but something came up and been working every day since…that was about 2 weeks ago
