OMG I filmed and edited this video all by myself! That might not mean anything to you but to me this is HUGE! Please forgive any problems or reduction in sound/vision quality, I’m learning on the job people! I’d like to start filming more videos myself as Sam is very busy and lives in the countryside so it’s not always practical, even though he’s brilliant at making my videos look ace. Recipe –
For the cupcakes…
125g self raising flour
125g caster sugar
1/4 tsp bicarbonate of soda
25g unsweetened dessicated coconut
135g soft unsalted butter
2 large eggs
1.5 tbsp coconut cream πŸ™‚
2 blobs of raspberry goo/jam

For the buttercream…
150g soft unsalted butter
340g icing sugar, sifted
3-ish tbsp coconut cream
more raspberry goo for filling
extra dessicated coconut, toasted and raspberries for decoration

    Jemma, I love the way you give the Kenwood AND Kitchenaid mixers equal time. Do you have a favourite though?
    Also, why doesn’t anyone make a cake stand that holds 12 cupcakes? Usually they only fit about 8. I realise they’re really made for (presumably) an 8-inch cake, but with a little thought they could also hold a dozen cupcakes, surely!
