After many months of request from you guys I thought I’d add another vegan recipe to the mix and this one is a cracker! If you’ve decided to be a vegan feel like your missing out on treat time then look no further because these brownies are just as fudgey, rich and chocolatey as those other ones! MISS OUT NO MORE!!!

2 tbsp flax + 5 tbsp water
115g melted vegan soya spread
160g caster sugar
1/4 tsp salt
3/4 tsp baking powder
60g cocoa powder
115g plain flour
50g chocolate chips/nuts

    I'm not vegan but I'm trying to cut out dairy products and I thought I'd give this recipe a go. I found the mixture a little hard to work with when transferring to a tin so I added some vegetable oil and soya milk (probably about a tbsp of each). I also added 150g of fresh raspberries instead of nuts/chocolate chips to the mix but these did break up very easily and made the mixture quite wet (maybe should have added less) and it did increase the cooking time. I probably baked the brownies for about 30 mins at 150 fan oven temp but kept checking on them. These tasted lovely and I can't believe they don't contain eggs or butter. I also got my mum to try them and she couldn't tell the difference.

    Lové the vegan recipe! Just wanted to point out that regular caster sugar is not vegan (cane sugar is not naturally white, so they use animal bones to process it). You can replace with with « unbleached » cane sugar or beet sugar (brown sugar is not vegan either, as it’s molasses added to bleached sugar)

    I made these on Saturday and they were such a success that I made another batch yesterday (Monday) to take to our musical rehearsal!

    I used chia seeds in place of flax and it still worked nicely. I also made a double batch the second time; it didn’t cook as evenly as the single batch but was still yummy!

    I literally just baked some of these, I made a couple of changes. I used unrefined muscavado sugar, soaked some chia seeds as the egg replacer and added pecan nuts. Holy cow they are amazing. Thanks for inspiration Jemma

    I tried them out, first time they were hard to spread out and didn´t turn out that nice, then I used a double amount of flaxseeds and water and added a Tablespoon of Apple puree. I also tried using melted dark chocolate instread of cocoapowder and it turned out amazing. It also works great with full grain flour if you add a little bit more water. Thanks Jemma for the inspiration!

I would love to see more videos where you use different types of flour: coconut, almond, chickpea, etc. Also I would love to see recipes with non dairy healthy fats and liquids. **Its bc I love baked goods however I'm trying to eat healthy, so I'm very interested in learning how to bake low carb desserts with alternative flour, non dairy substitutes, that are sugar free-like stevia.     Okay I've tested this and the flax egg gives the brownies an unpleasant sourly taste. You can clearly taste the flax if you know what flax tastes like. If you don't like that, I recommend mixing ground chia seeds (I used my coffee grinder to grind them) with some water.

    I really want make these but last time I did vegan baking the flax egg didn’t go that consistency. Also I don’t have any baking paper so can you bake brownies with just greasing the inside of the tin with vegan butter and will I be able to get the brownie out of the tin when it’s baked?
