I’m giving you a couple of neat techniques in this video. How to make a rectangular cake. How to decorate it Ombrรฉ style. AND how to marble the heck out of your sponge! Let’s get into it:

Recipe…
For the vanilla sponge –
250g soft unsalted butter
250g caster sugar
4 lg free range eggs
250g self raising flour
1/2 tsp vanilla extract
3 tbsp whole milk

For the chocolate sponge –
250g soft unsalted butter
250g caster sugar
4 lg free range eggs
215g self raising flour
35g cocoa powder
3 tbsp milk

Buttercreams –
330g soft unsalted butter
750g sifted icing sugar
6 tbsp whole milk
100g dark chocolate, melted and cooled slightly
1/4 tsp vanilla extract

    Just wondering if anyone can help me. Iv'e found that when I refrigerate my cake it becomes really dry. How long should I have it out of the fridge before serving to guests? And does refrigerating the cake in between decorating make it dry?

    Hi Jemma,
    I made this cake with only the vanilla part and followed every step of it.
    Somehow my cake is way too crumbly to handle and cut into slabs.. ๐Ÿ™
    Any suggestions on what could probable have gone wrong??!!
    BTW: It did take a longer time with my oven and took it out just when the skewer came out clean. it wasnt over or under cooked, but just too crumbly and buttery. Please HELP!!!
