Battenburg is a total classic but it is a bit boring by today’s standards! So I’ve made it more tasty and way more fun by making it a Rose and Pistachio MINI Battenburg!!

For the sponge –
125g unsalted butter, soft
125g caster sugar
2 lg eggs
125g plain flour (you can use self raising too)
1/8 tsp rose extract
pink food colouring
2 tsp milk
2 tsp milk
1 tbsp pistachio paste

Vanilla buttercream
a few drops of rose extract and pink food colouring
chopped pistachio nuts and crystallised rose petals to finish

Jemma-love watching your videos. Have watched over 40 of your videos and haven’t made a damn thing-i just love listening to your accent especially the way you say chocolate and butter. Your words sounds so delicious —don’t need to bake. Lol

Hi Jemma! I love this cake, it's so pretty! I'm one of those marzipan dislikers, but I still love how it looks on cakes etc. I wouldn't eat it. Your bakes are amazing and you are awesome!

Hi jemma, I'm glad that u make it easier for me to do this battenberg cake. I lived in Malaysia and difficult to get marzipan here and almond is expensive here. I'm glad that u modify the recipes. I watch most of you baking video and I loved it. Now I will definitely do this cake. Love u jemma and good luck.

  17. Desa L says:

Can I have the recipe in cups please

  20. Euklin Richards says:

Hi.  You did not put any raising agent like baking powder is that correct.

  21. Rebekah Legion SundayGirlJournals says:

Oh God! I was really excited about this until She said "buttercream". The whole thing that makes Battenburg cake so wonderful is the marzipan. You can't improve on a classic.

  22. Sidra Sheikh says:

Hi Jemma can u please tell the measurements in cups. Thank u

  23. Rheanon Jasmyne says:

Well after looking up the cake tins and seeing the price, there's no need for me to even finish watching this video!

  28. Eliza Z says:

Would rose syrup work as well?

  29. Bhavna Banerji says:

Jemma, thank you for this beautiful recipe. What are the dimensions of the Battenburg cake tin that you have used for this recipe?

  30. Tom Moncrieff says:

You've misspelt Battenberg. Berg = mountain, hence Mountbatten. Stopped watching when you said you'd dropped the marzipan. Buttercream is ubiquitous, marzipan is THE essential ingredient of any Battenberg cake.

  31. YAR TV CUISINE says:

    Bon courage 🇲🇦🇲🇦🇲🇦🇲🇦🤝💐
