Well you asked, and I answered! It’s a long one guys, I’m sorry. I just wanted to answer as many of your questions as possible. So, to help you out if you’re in a rush, I have put the questions and the times they appear below so you can skip my waffling! Thanks so much for so many brilliant questions. This one was super fun!

    Hi Gemma I was just wondering in Australia we have pure icing sugar and icing sugar mixture but is it the starch in the icing sugar mixture that prevents it from going hard like royal icing or should it still be able to be used as royal icing?

    I've just discovered you recently, and I'm binging on your videos. I LOVE that you're in a choir… I've been singing for most of my life, and I agree with you about how awesome it is. I have to drive an hour each way for my chorus that I'm in, and sometimes I don't feel like going, but the act of producing amazing music with a group of people is so amazing. thanks for sharing that!

    How do you manage washing the dishes coz when it comes to a bakery there will be tons to clean……I won’t get tired of baking but get tired of cleaning ….lol!! Especially cleaning the buttercream from piping nozzles

    Jemma do you recommend equipment for baking. Only just into baking, embarrassed into baking for charity events and I’m hooked. Seen you using angled spatulas and cake leveller – recommendations please. On amazon, many problems with levellers not cutting and spatulas being not firm enough.

    I tried making your lemon cake recipe. But it was soft on top instead of crusty and was very dense and buttery . A bit chewy too. Used the right measurements. What could have gone wrong?

    Completely agree on your views about Hospitality, I've been in it for most of my life and it DOES teach you SO much about being a decent human being! It's such an exhausting and underrated career but if you love it, it's worth it! So for all the people that frown when you tell them that the industry life is what you do full time, BOO you 🙂
