If chewy cookies are your favourite thing ever then prepare yourself for the tastiest cookies in town. In ALL the towns! The thing which sets these cookies apart from all the rest is the ‘burnt’ butter I use to give them a really deep nutty flavour. You can replace it with normal soft butter if you want but you’ll really be missing out, people!

Recipe –
120g unsalted butter, browned and cooled
110g dark brown soft sugar
35g caster sugar
1 lg egg
1/2 tsp vanilla extract
135g plain flour
1/4 tsp salt
1/2 bicarbonate of soda
40g chopped pecan nuts
90g milk chocolate chips

    Thank you for sharing a simple recipe! All the recipes you share looks yummy but most of them are a tad too troublesome to make so I've always saved the videos but never made them. But this cookie is simple enough! Will bake them once my cold is gone.

When I do it doesn't make sense and doesn't look like the same amount in your video(s). Would you be able to list the amounts in cups or could I get the correct amounts if I use a scale? When it comes to Victoria Sponge Cake, I know some baking powder is added, but I also know there is already baking powder in the self-rising flour, or self-raising flour. Why was more baking powder added? I'd love to make a great Victoria Sponge Cake one day!

    For anyone interested – I've made these twice and here's my 2 cents:
    1. They taste absolutely fantastic.
    2. I found that 40g balls of dough were too big. 25g turned out much better for me.
    3. Both times, I had to chop more chocolate + pecans for rolling the dough balls in. The given amounts aren't enough. Possibly because I made smaller cookies and therefore more balls. So keep that in mind.

    I made them yesterday and they turned out really great! The only thing I would suggest is using a bit less butter, because the cookies turned out a bit greasy for me. Also when making the burned butter prepare for it to take some time and keep stirring.

    I totally recommend this recipe, everyone who tried the cookies enjoyed them.

    I've made these and didn't like the aerated texture the bi-carb gives them, so exchanged that for 1/2 tsp of baking powder the 2nd time instead which gave a much better biscuit for me.
