Recipe – makes 4 servings

For the dark chocolate mousse…
85g dark or couverture chocolate
45ml whole milk
1 lg egg white
100g double cream

For the White chocolate mousse…
same as above but replace dark chocolate with white chocolate, obvs!

For the chocolate ganache…
75g dark chocolate
75 double cream

For the caramel ganache…
a few spoonfuls of salted caramel and ganache!

    I had to make Chocolate mousse for 60 people on Friday. I have my own recipe but it takes evaporated milk which I couldn't get in time. Before attempting any other recipe I decided to try yours. It came out fantastic. My boss actually said it was the best chocolate mousse he has ever had so thank you for this.
