For the Coffee Brittle…
220g caster sugar
60ml water
15g cold butter
small handful of chopped espresso beans
For the Coffee Caramel…
210g double cream
1.5 tbsp instant coffee powder
1/2 tsp vanilla extract
180g caster sugar
110ml water
For the sponge…
125g caster sugar
125g self raising flour
1/4 tsp bicarbonate of soda
125g soft unsalted butter
2 large eggs
1.5 tbsp very strong espresso
For the buttercream
200g soft unsalted butter
320g icing sugar, sifted
1/2 batch of coffee caramel

I just made these( added a little bit of coconut in the batter), and some coffee in the icing and they were amazing. Although, I only got 9 and not 12 cupcakes.

I tried this today and the only thing i didn't like was the frosting because of the sugar. It was sooo sweet, you can't taste the cupcake because of the sugar..Any tips??

my caramel is not as thick as yours it cooled for about an 1 hour and still is not soooo runny but not as thick can you help? I did put it in the fridge the freezer and outside cause it is winter help.

I just made these cupcakes today and they are in the fridge now. The only thing which disturbed me is the melted chocolate. When I melted the unsweetened melted chocolate, it got settled all of sudden and there was no chance to put on the caramel brittles 🙁 so I just pushed them in on a few cupcakes not all. Can you please guide which chocolate to take and if there is anything else to add in?
