Individual Salted Caramel & Banana Cream Pies | Cupcake Jemma

I promised you a pie and you’re gonna get a pie! Well, 6 pies actually! These pies take Banana Cream Pies up a few notches to include Salted Caramel Custard AND Chocolate Pastry shells!! They are LUSH!

Recipe –
For the chocolate shortcrust pastry…
225g plain flour
20g cocoa powder
2 tbsp icing sugar, sifted
pinch of salt
150g very cold butter, unsalted
3 tbsp ice-cold water

For the Salted Caramel custard filling…
110g caster sugar
45ml water
400ml double cream
pinch of salt
1 egg + 3 egg yolks

For the topping
1-2 bananas
150g double cream
75g creme fraiche
dark chocolate for grating on top

    Blind baking tart and pie shells: place tin upside down onto parchment, lightly spray with nonstick. Roll out a disc of crust and place on top. Get another tin, spray inside with nonstick and press onto crust. Trim off excess crust and bake upside down. 3/4 point, pull from oven and flip over. While hot, remove the now top tin. Wash with egg and finish baking. Perfect results every time, and no fiddling with plastic, parchment, beans or rice. This isn't the rule for everything, but most.

    I recently started following you Jemma, a few days ago! I just enrolled on a baking course. However, it does not teach us how to make cupcakes!! I watch your Youtube videos everyday in the evening. I've made your lemon cupcakes and was pleasantly surprised that they worked!! Previously all my attempts to make cupcakes resulted in either flat cupcakes or sunken.
    Regarding this recipe – I would like to make one large tart rather than 6 – What changes (temperature, amounts etc.) do I need to do?
