Nothing says Summer like the combo of Mango and Coconut. It’s like a sunny, tropical punch in the face! For a soft, pillowy punch, why not make cupcakes with these two Summer flavour heroes! I did and it felt GREAT!
Recipe –
For the Mango Curd…
5 egg yolks + 1 whole egg
110g sugar
1.5 lime juice
110g pureed mango
60g cold chopped butter
For the cupcakes…
125g self raising flour
125g caster sugar
1/4 tsp bicarbonate of soda
25g dessicated, toasted coconut
zest of 1 lime
135g soft, unsalted butter
2 lg free range eggs
2 tbsp coconut cream
For the coconut swiss meringue buttercream…
3 lg egg whites
225g caster sugar
300g very soft unsalted butter
3-4 tbsp coconut flavour + coconut extract if you want
Toasted coconut flakes to decorate!

Hi Jemma,
For the mango curd, you wrote its 1.5 lime juice, does it mean 1.5 tablespoon of lime juice or 1.5 lime?

I can't get coconut extract from Tesco…can I use coconut oil instead for the swiss buttercream?
I was looking for a coconut cupcake recipe and I knew Jemma would have made one!
I was just wondering why do we use butter sometimes to make the cupcake batter instead of vegtable oil? Hope someone could help me with this.

I just made the mango curd. I thought it was too sweet and it didn't taste like mango. Mostly eggy. I added a lot more lime juice to cut the sweetness and some extra pureed mango. That seemed to do the trick!
I made the curd but it had more of an “eggy” taste and a metallic aftertaste 🙁

why did my mango curd turn to a brown colour? not a beautiful yellow colour..I used metal bowl not the glass one, would it affect it?

How would this be with cream cheese buttercream instead of Swiss meringue buttercream?
I love your cupcakes and have been making quite a few. I have a newbie question. Is there a reason not to pipe the merinque? Or is it because you used the coconut to decorate?
