Bored of fruitcake? I know I was when I started baking, which is one reason I never make it! There are so many other things you can bake for Christmas, staring with THIS alternative Christmas Cake!

For the Chocolate Layer
265g plain flour
275g caster sugar
45g cocoa powder
3/4 tsp bicarbonate of soda
1/4 tsp salt
200g buttermilk
160ml veg oil
3 small eggs

For the malt cake
250g soft unsalted butter
250g caster sugar
4 lg eggs
190g sef raising flour
10g cocoa powder
a pinch of salt
40g of Horlicks/malt drink powder
3 tbsp milk

For the fruit goo
400g frozen forest fruits
50g caster sugar

For the Fruity mascarpone filling
250g mascarpone
4 tbsp fruit goo
120g icing sugar, sifted
120g double cream

For the chocolate mascarpone filling
250g mascarpone
100g dark chocolate, melted
120g icing sugar
120g double cream

For the white chocolate swiss meringue buttercream
225g caster sugar
3 egg whites
300g soft butter
225g white chocolate, melted and cooled

    Hello Jemma, i decided to do this cake for the birthday of my little girl 3years Old,
    so i did the chocolate cake 3 times, the first one, it was ruined, break in 3 side, i didn’t let it to become totally cold it’ my fault, ( the taste really good ), so i repeated it 2 times for getting more layer; and in the all experiences , the cake wasn’t ready at 30min or 35 min in the middle at 175c° i let it up to 45min not ready at all, again i returned it back in convection oven for 10min, then it was ok, but the top was open like a the bread with knife. what’s wrong?!! later i heard 10c° less 🙁

    please try to mention the method of heat and oven in the recipe !

    -For the chocolate mascarpone filling: was missed when i added the melted and colded chocolate suddenly she freeze in the robot
    -For the white chocolate swiss meringue buttercream: white chocolate also missed when i added the melted and colded white chocolate in the robot !

    How to fixe that Pleaseeee!!

    So yesterday I made the chocolate sponge part of this cake just for a trial. Mixed exactly as per instruction. Mix was batter like, looked good, I didn't tap the tins. However, when cool and I sliced the crumb was full of large air bubble craters. Also cakes domed in the middle making slicing into 2 layers impossible. Even if they had no doming the finished width wasnt enough to slice easily into 2. I used 8" pans. hmmmm Tasted nice though.
