Jammie Dodgers are the nation’s favourite kid’s biscuit! But I still love them and I’m a proper grown up now. At the Crumbs & Doilies shop we have cupcaked them and the Jammie Dodger cupcake is a big seller when we have it on the counter. So I thought I’d share the recipe with you!
Recipe…
For the raspberry goo –
400g frozen raspberries
100g caster sugar
For the sponge –
125g self raising flour
125g caster sugar
125g unsalted butter, soft
1/4 tsp bicarbonate of soda
2 lg eggs
1.5 tbsp whole milk
12 mini Jammie Dodgers
Raspberry Goo
JD milk –
200ml milk
4 Jammie Dodgers
For the buttercream
150g unsalted butter, soft
340g icing sugar, sifted
3-4 tbsp JD milk
Extra goo or jam and Jammie Dodgers for filling and decorating

I don't think I've seen the mini biscuits in Australia, we have the big ones and we call them Strawberry Shortcake biscuits, but I'll check the supermarket for the small ones.

I love all your baking videos….they really give me so much inspiration to bake! I need to make 24 of these cupcakes and this is a silly question but is it as simple as just doubling everything as I notice in your cake book there is 675g of icing sugar to 300g of butter, but if I doubled the icing sugar in this recipe it would be 680g. Thank you xx

Can I use fresh raspberry instead ?
Hey Jemma! I had some leftover frozen raspberries from making a raspberry cake for my family and I thought I could try out your goo to experiment with. My goo doesn't seem as thick as yours though. I weighed it out and followed directions to a T. Any suggestions? Thanks a lot! Love your videos ๐ <3

Made these again this weekend and this time made with raspberry's as per the recipe and am told by my work colleagues that these are amazing ๐ MY JD Milk was really, really thick though ๐
Does anyone know if its ok to ripple that raspberry goo through any cake batter? Iโm making coconut cake and was thinking after putting the batter in the pan, drop a couple blobs of the goo on top and marble it slightly with a toothpick – would that work?

Unfortunately for me I don't live in the UK anymore, so jammy dodgers are impossible to come by! I end up snacking on them non stop when I go back for holidays.

Hi Jemma, I'm so grateful for all the work you put into your recipes and channel. If I may, I'd like to make a suggestion. Could we have some more detailed explanations on the milk infusion? It took me 3 tries on the cereal milk recipe to get the milk right, and I ended up not following your instructions. I'm having a similar issue with the JD milk. I'm not saying this is your fault of course, but just wondering if your guideline is specific for an electric stove or something? Not sure what I'm doing wrong ๐
