How to Make Elvis Cupcakes | Cupcake Jemma

Elvis Presley wasn’t just brilliant at singing songs, he was also really great at eating! He had a penchant for weird combinations, including his favourite sandwich, which had banana, peanut butter and BACON! Here is a cupcake inspired by Elvis’s special sarnie!

For the cupcakes…

125g unsalted butter, soft
140g self raising flour
100g caster sugar
20g dark soft brown sugar or muscovado
1/4 tsp bicarbonate of soda
2 lg eggs
125g mashed overripe banana
1 tbsp whole milk

For the buttercream…
200g unsalted butter, soft
80g smooth peanut butter
450g icing sugar, sifted

Extra stuff…
Candied bacon, cooked
Peanut butter for drizzling
