This is one of my favourite buttercreams. I use it on cupcakes and bigger cakes as a filling and to decorate with. It is super moreish and really lovely to work with. Enjoy!
Recipe:
For the caramel…
150ml water
250g caster sugar
250ml double cream
1 tsp vanilla extract
For the buttercream…
200g unsalted butter, soft
2 tsp salt
320g icing sugar, sifted
1/4 batch of the caramel.

Sounds wonderful. In the case of not having the time for the caramel to cool or not having the proper cream on hand, could one use prepared caramel syrup or melted caramels?
Holy moly. The only caster sugar in my community cost $5 for 450 grams. I want to make this stuff but it's so hard to know what you can skimp on and what you can't.

Can we use all the caramel in the butter
For butter cream do you use Unsalted block of butter? And can we use readymade Carmel available in the market and what tip you are using for piping.

I followed the recipe step by step and got to the golden syrup off the stove… while adding the cream and vanilla it just turned to a yucky milky brown mess…

Hi, can I use salted butter instead of unsalted for the buttercream? Since you'll be adding some salt in it? Or will the salted butter be to salty?

Hi first I just want to say that I love your video's . What am I doing wrong? My sugar and water has been boiling forever! and it is not turning as dark as you're caramel . Anyone else having this problem ?
