How to Make Rainbow Birthday Cheesecake | Cupcake Jemma

Everyone loves birthday cake but then, everyone loves birthday EVERYTHING! Like this jazzy little number, the Rainbow Birthday Cheesecake!

Recipe –
For the buttery biscuit base…
250g custard cream crumbs
1.5 tbsp sugar
45g melted butter
1/8 tsp vanilla extract
1.5 tbsp colourful sprinkles

For the birthday crumbs…
180g plain flour
85g melted butter
1.5 tbsp sugar
1 tbsp sprinkles
pinch of salt
1 tbsp water

For the cheesecakey bit…
200ml double cream
500g cream cheese
100g icing sugar, sifted
1 tsp vanilla
various food colouring

    What cream cheese do you use? I’ve tried using normal Philadelphia from the supermarket and it just ended up too wet which meant my cheese cake never took any form and just slumped as soon as the tin was removed 😢

    I’m so sorry but I’ve made Jemma’s BBB many many times and it always turns out too crumbly, there isn’t enough butter to bind the base together I’d suggest doubling the butter to adjust to your liking but hers I’ve tried at least 5 times they do bind but still a crumbly mess every time
