You’re probably NOT bored of cupcakes yet (I’m not and I’ve probably baked over 1 million in the last 10 years, no joke!) but in the event that the unthinkable has happened and you have had enough of them, WAIT! There is another way! Cupcakes don’t just have to be, you know, cupcakes. They could be so much more! Like, for example, they could be baked inside a cookie shell! See? (play video)
Recipe –
For the cookie cups…
115g soft unsalted butter
2 tbsp caster sugar
2 tbsp demerara sugar
170g soft light brown sugar
1 lg egg
1 tsp vanilla extract
250g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
100g chocolate chips
For the cupcakes…
63g soft unsalted butter
63g self raising flour
63g caster sugar
1/8 tsp bicarbonate of soda
1/8 tsp vanilla
1 lg egg
2 tps milk
To decorate..
Any buttercream/frosting you like the most : )

Btw if you don't have a mini cupcake pan (like me) you can use a normal cupcake pan just double the amount of cookie dough and cake mix you put in each one π

I've noticed that Jemma always beats the sugar and flour together. Wouldn't that develop the gluten too much, making the cupcake doughy?

These are cute as can be! My grand is going to be getting out of Kindergarten in a couple weeks and I think I will make these for his Graduating Class of 2018! Such an exciting time me his Mum and me, of course, Evan will just want the Cupcakes. He is my helper in the kitchen on Baking Day. He is learning Disabled so speech and understanding rules are quite difficult for him to understand however, when we work (play) on the kitchen making cupcakes or cookies, he seems to understand much more when I tell him what to do. I think he has Baking in his Soul. Have a good day!

I made this today and it turned out terrible. The cookie dough was so soft and crumbly I could barely take it out of the pan!! I literally had to scoop them out. And it didn't taste very nice either… not too sure why. The cookie cup looked so much sturdier in the video. Maybe one should bake them first before adding in the filling
how long can i keep this cookie cup in a jar (without the icing)? i mean the freshness / expiry date?

Made this over the weekend for a party and it was a hit. One of the best cupcakes I have ever baked. This is such a cool idea. Thanks Jemma for sharing the recipe with us. I had to make one more batch of the filling. I guess my tin size was slightly larger. I topped with whipped cream , a drizzle of caramel and sprinkle of chocolate.
