190g self raising flour
1/4 tsp bicarbonate of soda
35g dessicated coconut
zest of 3 limes
200g unsalted butter, soft
190g caster sugar
3 large free range eggs
1.5 tbsp lime juice, freshly squeezed
50g caster sugar
90ml coconut milk
zest of 1 lime
toasted coconut flakes

I think your recipes are amazing and I always want to try some of them, however, I don't have a scale so it's really hard for me to measure out the quantities correctly, I usually use cups as it's much easier – so please can you convert the measurements into cups? I really wanna make this cake! Also, I don't have coconut milk, what would be a suitable substitute?

Jemma help! I tried making this, but switched it to the appropriate amount of shortening rather than butter (anaphylactic shock to dairy) and my centre caved in? I did the appropriate conversion to equal 200g unsalted butter but maybe there's more to it? Could my old ghetto oven not regular temperature enough and the temperature fell below 175Β°c? Thanks!

I just made this one for the second time following exactly your recipe and it turned out amazing!!! half way through the preparations I realized that I ran out of white sugar so I used light-brown sugar instead and it turned out just perfect!!! and since I am using hot air oven, I baked it at 175c for 30 min. and it turned out perfect. Thanks!!!

Wasnt done after 30 mins and when i checked it I DROPPED IT!!! So now it has a huge hole right in the centre. π«πππ hopefully turning it upside down you wont be able to tell

I have watched every video you have posted. PLEASE don't use backing music which contains singing. It is horribly distracting and makes it difficult to hear what Jemma is saying. Thanks.
