How to Make Easter Lemon Meringue Chick Cupcakes | Cupcake Jemma

Eggs schmeggs. It;s not all about eggs at Easter. There are MANY other Spring-defining cute things you can work with such as these cuter than cute Lemon Meringue Chick Cupcakes!

Recipe –

For the Meringue chicks…
3 lg free-range egg whites (weighed)
Caster sugar (double the weight of the egg whites)
pinch of salt
dash of vanilla extract

For the cupcakes…
125g soft unsalted butter
125g caster sugar
125g self raising flour
1/4 tsp bicarbonate of soda
zest of 2 lemons
2 large eggs
1.5 tbsp lemon juice

For the buttercream…
100g soft unsalted butter
225g icing sugar, sifted
2-3 tbsp lemon juice

Extra – lemon curd, optional

    @cupcakejemna Hi Jemma, I never get exactly 12 cupcakes out of this recipe if I doo the cupcakes seem smaller to me. Is it because I am using large cupcake cases? I even measure each cupcake when I am filling them

    Such a tasty recipe! But did anyone else find that the lemon juice (I added 2.5tbsp) split the buttercream and made it too runny? I added more icing sugar, but it was still split.
