How to Make Mince Pie Pop Tarts | Cupcake Jemma



MERRY CHRISTMAS!!! Santa and his reindeer have got A LOT to do tonight and so it’s VITAL that they receive snacks along the way and what better than a mince pie? Ok, THESE are better than mince pies! They are Mince Pie Pop Tarts and they rule!

Recipe –
250g plain flour
160g unsalted butter, cold and chopped
65g caster sugar
pinch of salt
1 whole large egg
2 egg yolks
1/2 tsp vanilla
half a jar of ‘mince meat’ or jam if you prefer, blended a bit

    160 grams butter in 250 grams flour is 64% butter.

    I followed your recipe and the pastry tasted nice but it cracked open in the oven, even though I made steam vents.

    Isn't shortcrust normally 50% fat to flour?

    With incorporating the butter without a food processor you can measure the butter then freeze it, yes freeze the butter! When you are ready to add your butter use a cheese grater.. dip the butter in your flour mixture every once in awhile while you grate the butter!
