Recipe for Peanut Butter Rocky Road Cookies | Cupcake Jemma



Here is a Crumbs & Doilies product reveal! These cookies sell out every time they go out to the counter so if you get here to late or, worse still, you can’t get here at all, you can recreate these without a great deal of effort! Yay!

Recipe –
120g smooth peanut butter
110g unsalted butter, soft
100g light soft brown sugar
100g caster sugar
1 lg free range egg
1/2 tsp vanilla extract
150g plain flour
1/2 tsp bicarbonate of soda
75g chocolate chips
a couple of handfuls each of chocolate chips, mini marshmallows and roasted peanuts
Extra melted chocolate for drizzling!

    Hi Jemma I hv tried out the recipe for red velvet cookies previously and they dont really spread quite alot as compared to yours which are GREAT. They turn out to be something like macaroons. Is there a way to fix tat??

    I made this tonight!!! and OMG they are soooooooo good!!! I've been looking for this kind of texture cookie recipe for a long time and tried several different recipes they all turned out cakey which i don't like at all. this is my Go-To Recipe for a chewy and soft center just a little crunchy on the outside.     BTW why do you use plastic bags for so little quantities of chocolate to drizzle? Isn't it more nature-friendly to use self-made cones from baking paper?
