Cookie Dough Cheesecake Recipe | Cupcake Jemma

Is there anything better than sneaking a bit of the cookie dough in to your gob before you’ve baked them? If, like me, raw cookie dough is one of your favourite things ever then this cheesecake is going to be your new best friend.

Recipe –
100g digestive biscuit crumbs
50g unsalted butter, melted
50g demerara sugar

Cookie Dough…
50g unsalted butter, soft
50g light soft brown sugar
50g caster sugar
3tbsp Greek yoghurt
1/2 vanilla extract
140g plain flour
75g dark choc chips

The Cheesecakey bit…
200ml double cream, lightly whipped
500g cream cheese
100g icing sugar, sifted
1/2 tsp vanilla extract

Cacao nibs for decoration if you like!

    I made this for my husbands birthday. it was loveky. Although i used a bigger cake tin so the cookie layer was very thin. Will use a smaller one next time.

    Hi first I love this cake and I've done it so many time BUT TODAY I tried to make one and I dont now WHY but the cream and the cream cheese mixed together are so LIQUID !! It's like liquid cream and I don't know why, it's awful can you explain me what happened??? And what can I do ??? 🙁

    PS: i did it as i always do, nothing was different, neither the ingredients, neither the kitchen..maybe it's the weather? it's hot outside… I don't know please help me cause i feel like pouring milk on the cake and I don't want to ruin this cake..

    My partner and I tried making the cookie dough cheesecake with a layer of Bailey's cheesecake from your other video. These are literally my most favourite things in a cake.     I dont have a springform pan (just a regular baking pan with no removable base). how do you transfer it onto another plate without flipping it over & smudging the creamy top? And even if I get myself a springform pan, how do I gift the cake to someone without giving away my springform pan base lol. I have cardboard cake base, aluminum foil & parchment paper. what should I do?

    I know this post is 1yr ago but looks lush…has anyone made it…if so is the extra sugar in the biscuit base necessary? More so is it a nice dessert as I've never tried cookie dough?

    First a Layer of Cookiecrumble + Sugar combined with fat, on top another Layer of Sugar combined with fat + extra carbohydrates, and finally a Layer of Fat mixed Up with Creamcheese and ofc Sugar. Enjoy your Belly!

    what i love about jemma is that she actually eats a decent sized portion of her food and actually looks happy while eating it… ive seen so many other bakers who eat like half a crumb of their food and go "mmm yEAH its so fudgy and moist, mm so delectable" after half a mouthful

    That whipped cream looked so different when you whipped it with hand and when you added to the cheesecake mix. It was very runny when you whipped it and then when you added it, it was very firm, I've noticed this on one of your other videos also. Hmm…

    When I made this delicious cheesecake Jemma I found there was not nearly enough cookie dough to cover the base and to make the balls. Also, not enough filling. It is such a pity as I followed the recipe exactly and am a fairly experienced cook. The quantities you give just don’t seem to be enough.
