Jamie and the guys at Hotpoint were kind enough to invite me along to their flashy kitchen at Food Tube HQ to try out some new kit, so I thought what better way to test things out than a Mint Choc Chip layer cake! ….Sponsored by Hotpoint
Recipe –
For the cake
550g caster sugar
525g plain flour
95g cocoa powder
3/4 tsp salt
1.5 tsp bicarbonate of soda
200g dark choc chips
350ml cold coffee
350ml buttermilk
320ml vegetable oil
5 large free range eggs
1/4 tsp peppermint extract
For the buttercream –
500g unsalted butter, soft
1125g icing sugar, sifted
6-7 tbs whole milk
1/2 tsp peppermint extract
green food colour paste (optional)
Crystallised mint leaves and extra choc chips for decorating.
This recipe will make a 7 inch cake which serves up to 24 portions.

Hi Jemma, just wondering if you have ever tried cake- strips – dampened fabric strips you put around the tins before baking – apparently they give a more level cake with moist sides so there's no need to level and trim. I guess they are better suited to a hobby baker than a professional. It would be great to know your thoughts on, and or experiences of, them. Thanks again for another inspiring recipe! Mint-choc- chip was one of my favourite ice-cream flavours when I was a kid!

I love your videos but the amount of batter and icing e.g. you waste by transferring things into so many different bowls and not cleaning the bowls with a spatula makes me cringe.

I find by using cake strips ( or damp kitchen cloth wrapped in aluminium foil ) around the tins before going into the oven help the cakes to stay flat at the top and no crust around the sides and therefore NO WASTE π I'm surprised you do not use this method as lots of professionals now do – just saying.

Just made this cake and my oven took 36 mins per 2 layers, am I doing something wrong? The chocolate chips also stuck to the bottom of the tins??
Is there any substitute instead of peppermint extract?

Jemma – Made this cake for my daughter's birthday. It turned out fantastic. I am a Doctor by profession and my daughter's birthday came during the Lockdown period in Delhi. Baking is my hobby but all birthday cakes are to be baked by me. Thanks.
