How to make a Rainbow Polka Dot Swiss Roll | Cupcake Jemma

Swiss Rolls are perfect for a light, sweet treat on a sunny day but what would make a Swiss Roll better? Adding multicoloured polka dots, obviously! This method is one I’ve been wanting to do or ages and now I’m sharing it with you guys. And once you have it down, the possibilities are endless.

For the dots
50 g unsalted butter, softened
50 g icing sugar, sifted
2 eggs whites
50 g plain flour, sifted
Food colouring (paste or liquid in red, orange, yellow, green, blue and purple)

For the sponge
3 large free-range eggs, separated
80 g caster sugar
45 g unsalted butter, melted
75 g plain flour, sifted
½ tsp vanilla extract

For the filling
120ml double cream
Large blob of jam
Fruit of your choosing!

Crumbs & Doilies
1 Kingly Court

Hi Jemma. Love your work! I am wondering if there is a way of putting polka dots into a whole cake (rather than a Swiss roll}, using one cake tin (without buying a cake tin which makes tiny cake balls}? Also I would love it if you would do an icecream cake, which could be made using a normal cake tin. Thanks, Nenita

  26. Sidra Sarmad says:

Can we use the same measurements excluding the dots? Can we make plain Swiss cake by using same measurements?

  27. Romy V says:

I made this cake, I added some cream of tartar to stabilize the egg whites further, and a pinch of salt, although next time I'd add more because the cake is quite sweet. This bake was not a success for me because the outside of the cake where the design is looks unattractive due to having brown spots, although I took it out of the oven as soon as it was done. Perhaps my problem is that I used a dark jelly roll pan, not sure. I think not being able to roll it into a kitchen towel sprinkled with confectioner's sugar to cool off makes it very difficult for it to not crack, mine certainly cracked. Altogether it was disappointing 🙁

  28. Mel Reno says:
