How to make PB&J Cookies | Cupcake Jemma



Eat too much at Christmas? Me too! Want to eat more? Me too! This is great, because I am going to give you the perfect quick recipe for some delicious Peanut Butter and Jelly/Jam Cookies so that you can poke your January diet in the eye. Diet, Schmiet. Get baking!

RECIPE

110g/half cup of soft unsalted butter
135g/half cup of smooth peanut butter
110g/half cup of caster sugar
110g/half cup of soft light brown sugar
1 large free range egg
Half tsp of vanilla
160g/half cup plain flour
Half tsp bicarbonate of soda/baking soda
Half tsp salt
Third of a jar of jam

    Great recipe!Only 3 minor issues
    -Sugar granules took ages to disolve
    -Too sweet IMO (20gr less of sugar would make it)
    -Way too much baking time (my first batch turned crispy so I reduced the time by 2 minutes and chewy perfection came out!)

    hi Jemma, if I use homemade peanut butter, do I need to adjust the recipe or something? I only use roasted peanut with a pinch of salt and sugar for the peanut butter

    Amazing amazing cookies! A little too sweet for me so next time I’ll just half the jam and a little sugar. But DEEELICIOUSSSS!!!!
    Also if u can pls tell why did my Cookies stuck to the butter paper? Could it be the jam?

    Way too sweet for me. I could hardly taste the peanuts. Next time I'll put much less sugar, no vanilla and more salt!

    Hi! i halved the recipe and reduced the sugar in about 20 gr and weighted the egg. But mine didn't spread this beautifully.. was it because i cut the sugar?
    despite that the flavor was delicious!
