I love nuts! They’re pretty cool right? Some nuts aren’t even NUTS! They are seeds. Or peas. Or drupes! But one of my favourite ‘nuts’ is a genuine, bone fide nut and that, people, is the mighty Pecan. To celebrate it’s true unequivocal nuttiness, I’m going to show you how to make it even more delicious by turning it into brittle. Sure, you can use this method to ‘brittalize’ pretty much any of the above but this one is my favourite and so I’m sharing it with you.

RECIPE

½ cup water
1 cup sugar
2 cups of nuts (you can use between 1 and 2 depending on how you like your brittle)

Just made this and it turned out beautifully! Just wondering though, if you wanted to add any other flavorings to it like cayenne pepper or salt, when would you do so? When you first add the sugar and water or after it's caramelized or would you have to sprinkle it over top?

in indinesia this is actually one of traditional foods, it's called ampyang and here we just use regular ground nuts and brown sugar so it's sturdy to the touch but you can lick it off like candy.
