Can’t afford to go on holibobs to Jamaica? Fear not! This cake will make you FEEL like you’re there without even having to leave your kitchen. Its dark and spicy and creamy and it basically rules!


375g soft unsalted butter
330g soft dark brown sugar
225g black treacle (or molasses)
75g golden syrup
6 large free-range eggs
375g self-raising flour
5 tbsp ground ginger
3 tsp ground cinnamon
4 & ยฝ tbsp soured cream
8 nuggets of stem ginger chopped
150g soft unsalted butter
240g cream cheese
840g icing sugar sifted

    HI Jemma, I have 3 10inch round cake tins, when I tried making ur triple layer lemon cake the batter didnt fill the 3 tins so I ended up using only 2. I probably need more batter for this one as well. If I double the batter it will be too much, can I just add another half of the quantity? what do u think? thanks

    I'm from Jamaica and my grandma also puts fresh nutmeg and vanilla in her ginger cake. Maybe you should give it a try it might just become more absolutely perfect if that's possible

    Thanks for your video and great recipe Jemma!ย  Fabulous as always!ย  I've been making a fruitcake Christmas cake for years, but it'sย really quite unfair, as only I and one of my daughters likes fruitcake.ย  I think this is a GREAT alternative to make this year – very festive flavours!ย  I think the only thing I'd add to this recipe, are walnuts… I wish you – friends and family,ย and all your viewers, a Merry Christmas!!!
